This is a super yummy, kid approved treat that is also HEALTHY!
The Filling:
4 apples, cored and chopped (keep the skins on)
1 cup fresh cranberries
1 tsp cinnamon or apple pie spice blend
3 tbsp raw honey
Mix together and spread out in greased 8x8 baking dish
The Crumbly Topping:
1/4 cup of extra virgin coconut oil, plus more for greasing the baking dish
1 cup of old fashion rolled oats (not instant)
2 tbsp raw honey
Then add the topping to the top of the filling mixture and spread out.
Bake in oven at 375 degrees for 30-40 min until apples and cranberries are soft.
When done remove from oven and set aside to cool a little it is delish if you serve warm!
Here are some tips to keep it simple and healthy-
- Keep the skins on the apples it provides extra fiber and nutrients in the skin and also not so much work to prep
- I like to buy fresh cranberries when the holidays are over they are cheaper and freeze well. Make is easy and yummy to add them to other baked or cooked dishes.
